SWEET CHILLI JAM

Please don't think that I've gone crazy and think you should switch this for your strawberry jam on toast in the morning! It does however pair deliciously with cheese on toast.
I firstly made this recipe around Christmas time when making hampers and everyone absolutely loved it! It is so easy to make and really handy to keep in the fridge to make your last minute dinner more exciting!
Makes approximately six 250 millilitre jars
1 kilogram of jam sugar
150 grams of red peppers (cored, deseeded)
125 grams of red chilli peppers (I remove the seeds, but leave them in if you like it hot!)
600 millilitres of apple cider vinegar
You'll also need a food processor, large pan and six jam jars.
It really is as simple as follows..
Sterilize your jam jars in the dishwasher and leave them to dry and cool
In a food processor, blitz up your red peppers and chilli peppers and place to one side.
Over a low heat, dissolve the sugar in the vinegar without stirring.
Once all sugar is dissolved, add in the chilli-pepper mixture and bring the pan to the boil and leave at a rollicking boil for 10 minutes (keep your eye on the pan to ensure it doesn't boil over, i'm speaking from experience!).
Take the pan off the heat and allow to cool, don't worry if it doesn't look jam like yet, it will thicken up once cooled
After about 45 minutes when the mixture looks more 'jellylike' decant into your jam jars and seal tightly.
Then you can give a few jars away as gifts and keep some for yourself!

Chilli and Garlic King prawns
Melt oil and butter in a pan, add in some crushed garlic and add the king prawns and a spoonful of the chilli jam and some coriander - done! Literally takes about 4 minutes and it is sooooo tasty. Serve with crusty bread or some courgetti if you're feeling healthy.
